Thai Iced Coffee Pops

One of my favorite summer indulgences is iced coffee. Something about the combination of cold and creamy really satisfies when I'm feeling the heat. This delicious recipe from Woman's Health mixes antioxidant-packed java with Thai spices for a cool dessert that's as exotic as it is refreshing.

Lemon Pale Ale Beer Pops

Where I live, we’re awash in an amazing selection of craft and micro brews. They’re delicious after a long hike or a hard day at work, but I feel like I’m always fighting to finish a bottle before the heat catches up. With these beer popsicles from The Beeroness, lemon juice and sugar are combined with your favorite pale ale to create a shandy on a stick that will be cold to the last lick.

Spicy Watermelon Popsicles

Ok, so this popsicle doesn’t include booze (officially) but it’s got jalapenos and tomatoes in addition to refreshing watermelon, which definitely makes it better suited for an adult palate. According to recipe creator Jerry James Stone of Cooking Stoned, it’s “not overly sweet but it is still dessert–trust me. The watermelon makes sure of that. And the heat from the peppers keep it bright and tasty.”

Strawberry Peach Vodka Collins Pops

Peaches and strawberries are a staple at almost every farmers’ market. I recommend doubling your order of both, and dedicating a generous portions of these sweet summer fruits to this recipe from Endless Simmer. Mix in a little tonic water and your favorite organic vodka, and voila! You’ve got a treat that’s sure to please.
