Greek yogurt is delicious, high in protein, and a good alternative to sugary snacks. However the $2 billion dollar a year industry has a dark side that comes in the form of toxic acid whey. It takes three to four ounces of milk to create yogurt and the rest becomes a runny, hazardous byproduct that cannot be released back into the environment. As it decomposes, acid whey depletes oxygen from streams and rivers, killing wildlife and creating “dead zones” over large areas.

Easy to breed, feed and observe, they are the subject of choice for many hoping to study a broad range of scientific inquiries. After hearing her parents debate the benefits of organic over conventionally-raised foods, Texas student Ria Chhabra decided to use the insect to investigate their argument. The 16-year-old looked at the rates of stress, fertility and longevity of the flies and noticed that all fared better on the organic potatoes and bananas that they were fed. She has since published her results, been named as a finalist in the 2011 Broadcom Masters national scientific challenge, and partnered with a research laboratory at the Southern Methodist University in Dallas.

Aura is a concept for a portable and environmentally friendly steam cooker utilizing zeolite minerals. Zeolite minerals, upon being heated, release large amounts of steam from water that had been previously adsorbed. When zeolite comes into contact with water, a chemical reaction adsorbs the water and emits heat. When heat is applied to the zeolite, the process is reversed and the water is released. Because the heat is trapped in the chemical structure of the zeolite, the material never actually feels warm. It is which is why this is a “loss-free” storage method. By using zeolites the designers of Aura aim to eliminate pollution caused by using coal or wood in picnic areas and promote healthy eating. Zeolite minerals can be charged while something is being baked in the oven without any extra energy used. Aura’s comes with a base made of basalt stone, a grill to put the food on and a bell jar shaped lid to provide steam circulation.

Home coffee-making equipment has come a long way, but the typical french press is still assembled from plastic and delicate glass in an overseas factory. The Portland Press is a french press for a mason jar that is made in the state of Oregon out of materials sourced in the USA. It’s a simple, clean, practical design made out of fundamental materials: glass, wool, steel, and wood. Most importantly, the Mason jar is easy to replace if it breaks, and the rest of the Portland Press is backed with a lifetime warranty. The Portland Press just launched a crowdfunding campaign on Crowd Supply – if you’re a fan of this project you can support it here!

Scientists have been growing petri dish hamburgers from cultured meat specimens for the last few years, but Dr. Mark Post wants to make lab-made a consumer reality. The Maastricht-based researcher has been developing a beef muscle in vitro burger that he plans to serve up to attendees at an event in London next month – at price tag of $325,000! The burger is made up of 20,000 strips of cultured muscle, and Post plans to prepare it by adding only salt and pepper to enhance its lab-grown flavor.

With tomatoes from Chile, salmon from Norway, chocolate from Africa, and coffee from Indonesia, a trip to the local grocery store can seem like a journey around the world. But food security is a serious issue in the 21st century, as countries around the world struggle to produce enough food to feed their growing populations. A new study from the Potsdam Institute for Climate Impact Research in Germany that was published in the journal Environmental Research Letters suggests that over half of the world’s population could depend on imported foods by 2050.

Heliospectra’s new LED lighting system has been chosen by the German Aerospace Center (DRL) as part of the EDEN (Evolution and Design of Environmentally-closed Nutrition sources) research initiative. The Institute of Space Systems in Bremen, Germany, will use Heliospectra’s advanced lighting technology in its research to develop bioregenerative life support systems for use in remote locations both here on Earth and in outer space.

In an effort to create an alternative to disposable plastic silverware, Triangle Tree has produced Edible Spoons, a spoon that you can eat after finishing your meal. Made of corn, the spoons are biodegradable and can either be composted or consumed. The Edible Spoon is also designed to break apart after use to make snacking easier. Created with all organic ingredients, the spoon comes in three flavors (plain, spicy, or sweet), and can act as a novel snack or an eco-friendly alternative to petroleum products.

Earlier this year, when a tornado ripped through Hattiesburg, Mississippi, it left a scene of destruction in its wake. But as the storm-ravaged residents set about clearing fallen trees and branches, Jody Mabary saw an opportunity to create a space that pays homage to nature’s gentler side—by constructing a community garden from all of that storm debris.

A new study by the Environmental Working Group has found that close to 50 percent of supermarket meat products in the US are tainted with so-called superbugs—strains of antibiotic-resistant bacteria. These bacteria are not only responsible for food-borne illnesses (such as E. coli) and other infections, but they are also tied to the spread of resistance to antibiotics in humans. The reason for this incredibly high presence of antibiotic resistant bacteria in meat? It has something to do with the 30 million pounds of antibiotics sold for use in US livestock in 2011 alone.

Few people turn to a tree branch or corn husk for a meal, and for good reason. The cellulose found in the cell walls of plants is enormously difficult for the human digestive system to break down. The carbohydrate is one of the most abundant organic materials in the world, and thanks to new research it could serve as a potential food source for a global population estimated to reach 9 billion by 2050. Researchers from Virginia Tech recently found a way to convert cellulose into amylose through a bioprocess called “simultaneous enzymatic biotransformation and microbial fermentation”. They published their findings this week in the early edition of Proceedings of the National Academy of Sciences.

Fudge is pretty much a candy comfort food staple, and making a fresh batch at home can make that chocolatey goodness even more satisfying. But if you’re adhering to a strict vegan diet, or just worried about loading up on calorie-filled butter, it can be a bit too much of a guilty pleasure. With this vegan recipe, however, you can enjoy cruelty- (and relatively guilt-) free fudge, that with zero-cooking takes just 10 minutes to make! Follow these four simple steps to whip a tray for the whole family.
