Broccoli Parmesan meatballs
These veggie “meatballs” served up by Oh My Veggies have a smidgen of dairy cheese in the recipe, but if you want to vegan it up, it’s simple. Simply switch out the shredded Parmesan cheese for some vegan shredded cheese and nutritional yeast. Bonus, while these meatballs are an obvious addition to pasta, you can also use them in other ways, such as on a “meatball” sub.
Mini granola cups
Perfect for breakfast, brunch, a snack, or as a healthy holiday or party treat, these super cute little granola cups can be filled with whatever you like. Marissa, creator of Get Off Your Tush and Cook, suggests Greek yogurt and fruit as a filling, but vegan families can use soy or another vegan yogurt alternative instead.
Nutmeg sweet potato stacks
According to The Spice Train, a potato stack is a stack of, “super-thin (you need a mandolin for this) potato slices brushed with oil and seasonings and baked inside the cups of a muffin pan until soft in the middle and crispy on the outside.” Yum! A pretty alternative for holiday sweet potatoes, or simply a great snack for kids, this sweet potato stack recipe is awesome.
