One-Pot Quinoa Curry, quinoa with pumpkin and coriander, one-pot meal, comfort food, vegan recipe

1. Gather the ingredients

  • 1 cup of quinoa
  • 1/4 of a small pumpkin (or 1 cup of frozen pumpkin chunks)
  • 1 red onion
  • 1 cup of chickpeas
  • 1 small bottle of coconut milk
  • 1 lemon
  • a bunch of fresh coriander
  • 1 tsp curry powder
  • 1 tsp of ground ginger
  • 1 tsp of ground turmeric
  • 1/2 tsp of ground cardamom
  • 2 chili peppers
  • 1 cup of water
  • a pinch of marine salt
  • 2 tbsp olive oil

2. Sauté the onion

Chop the red onion and sauté with olive oil until tender, for about 3 minutes over medium heat.

3. Prep the spices

Grind the ginger, cardamom and turmeric if you need to, and add them to the onions together with the curry powder. Stir constantly.

4.  Add the coconut milk, water and quinoa

Add the coconut milk, water and then the quinoa and chickpeas into the mix, a pinch of marine salt and make sure you scrape the bottom to remove any stuck bits. Bring to a boil and then lower heat to a simmer. Cover and cook for 15 minutes until the quinoa is half done.

5. Add the pumpkin

Bring in the frozen pumpkin and (if you are using fresh pumpkin, first chop it into small chunks). Cover and cook for 10-15 minutes or more, until the quinoa, chickpeas and pumpkin bites are tender and most of the liquid has been absorbed. Turn off the heat and let sit for a few minutes.

6. Season and enjoy

Serve with lemon juice, olive oil, and salt if required. Add fresh coriander leaves on top and enjoy!
