1. Gather the ingredients

  • sweet potato
  • red aduki beans
  • black olives
  • red onion
  • avocado
  • parsley

Red sauce:

  • red aduki beans

2. Cut the sweet potato in half

Wash and cut the sweet potato in half, horizontally. There is no need to peel it. If you prefer baking it, pinch with a fork and place in a tray in the oven until soft on the inside.

3. Boil the sweet potato

Boil the sweet potato until soft. Make good use of the water and throw in a cup of red beans to be used for the sauce and garnish.

4. Cut the red onion

Cut the red onion into small bits, use some for the red sauce and some as garnish.

5. Make the red sauce

Just like with hummus, blend the boiled beans with a dash of extra virgin olive oil, marine salt and pepper, and also red onion for a spicier edge.

6. Cut the avocado, black olives and decorate

Cut the avocado into small bits with a spoon and then a knife. Cut the black olives. Serve this delicious Jacket Sweet Potato with the red sauce, beans, avocado, olives and fresh parsley on top.
