1. Gather the ingredients

  • a long bread roll
  • half an onion
  • a few mushrooms
  • a few dried mushrooms
  • a bunch of fresh parsley
  • some pickled cucumber
  • chili peppers

Vegan cheese:

  • almond milk pulp
  • black olives
  • 1 garlic clove
  • a pinch of marine salt
  • extra virgin olive oil

2. Make the vegan cheese

You can make a quick vegan cheese spread using the pulp leftover from your vegan milk. We used almonds’ pulp, but cashews or sunflower seeds’ pulp will also do the trick. Blend the pulp with chopped black olives, a garlic clove, a pinch of marine salt and some extra virgin olive oil to get a salty, oily spread completely animal-free. Set aside. 3. Sauté the mushrooms

Cook the dried mushrooms in a pan with boiling water for a few minutes. When the water has evaporated, add chopped fresh mushrooms, onion and sauté with some olive oil. Take out and set aside.

4. Warm up the bread

Slice the long roll in half and place in the same pan with leftover oil until golden brown.

5. Get the pickles ready

Slice the pickled cucumber into thin stripes, and chop the black olives and chili peppers into tiny fiery bits.

6. Build up the sandwich

To make this delicious Vegan Philly Cheese Sandwich first spread the cheese on both pieces of bread, add the sautéed mushrooms and onions, the pickles and finish off with a fresh aromatic sprig or two of parsley. Enjoy!
