HOW TO Make, warm wrap, roasted sweet potatoes, crispy chickpeas, flat brad wrap, vegan warp

1. Gather the ingredients

  • 2 large sweet potatoes
  • flatbreads
  • 1 tbsp of olive oil
  • 1 tsp of fresh thyme
  • 1/2 tsp of sea salt
  • a handfull of sunflower seeds
  • a handfull of dried cranberries
  • Fresh arugula

For the chickpeas:

  • 1 can of chickpeas
  • 1 tsp of ground cumin
  • 1/2 tsp of smoked paprika
  • 1/4 tsp of ground cinnamon
  • 1 tbsp of olive oil

For the garlic & dill Vegenaise

  • 4 tbsp of Vegenaise (vegan mayonnaise)
  • 1 tbsp of dill
  • 1 garlic clove
  • a dash of olive oil

2. Prep the sweet potatoes

Preheat the oven to 400 degrees F. Wash, peel and chop the sweet potatoes into bite size cubes. Drizzle them with olive oil and roast with fresh thyme and sea salt on a large baking tray. Bring to the oven for half an hour or until the sweet potatoes are soft (pierce with a fork to test).

3. Prep the chickpeas

Fill a container with hot water and add the chickpeas, gently massage them to take the skins off.

4. Spice up the chickpeas

Drain and toss to coat with cumin, smoked paprika, cinnamon, salt and olive oil. Arrange on baking sheet with the sweet potatoes where space permits, or use a different tray. Bake for a total of 25 minutes, flip and stir half way. You’ll know they’re done when the potatoes are fork tender and the chickpeas slightly crispy and golden brown.

5. Prep garlic & dill Vegenaise

In a small container add a few spoonfuls of Vegenaise and mix in finely chopped dill and garlic. Stir and set aside.

6. Prep the breads

Warm the flatbreads in the oven for about 2-3 minutes.

7. Wrap

To assemble, top each wrap with a portion of sweet potatoes and chickpeas and the toppings, and top with a dollop of Vegenaise.
