1. Gather the ingredients

  • 1 large cauliflower
  • 1 onion
  • 1 large carrot
  • a bunch of peas
  • 1 green onion
  • 5 tbsp of sunflower oil
  • 1 tbsp of sesame oil
  • 2 tbsp of soy sauce
  • a pinch of marine salt

2. Make the cauliflower ‘rice’

Break the cauliflower into small florets and process in a food processor until the texture resembles rice (you could also use a grater).

3. Cut the onion and carrot

Chop the onion into tiny bits and sauté or stir-fry in a pan with a generous amount of sunflower oil over medium heat (325°F). Cut the carrots into small cubes and take them to the pan. Stir.

4. Open up the peas

You could use frozen or fresh peas, and if you think they are too big cut them in half. Bring to the pan. Mix in a few drops of sesame oil and a pinch of salt. Stir.

5. Keep cooking

Keep stirring until the onion is golden, add the cauliflower ‘rice’, chopped green onions and stir-fry for an extra 2 minutes until the grains are tender.

6. Enjoy

Serve hot and season with soy sauce and chopped green onions.
