1 . Gather the ingredients

For the crust:

  • 4 tbsp of almonds
  • 5 tbsp of oats (for gluten-free, use GF oats)
  • 1 tsp of marine salt
  • 10 Medjool dates
  • 2 tbsp of coconut oil

For the top layer:

  • 5 Medjool dates
  • 1/4 cup of water

2. Process elements for the crust

Process the almonds, oats and salt until a fine crumble forms.

3. Finish the crust

Melt the coconut oil in a pan and add to the mix, along with pitted, roughly chopped dates. Process until sticky and add more oil if it’s too dry. Remove from the processor and set aside.

4. Sparse the crust

Line parchment paper on a tray or the table and press the mixture very firmly and as even as you can using your fingers.

5. Make the squares

Fold the parchment paper into a square shape (with the crust inside) and knead gently on top of the paper until the crust reaches the edges of the square inside. Then gently remove the square crust and place it on a plate.

6. Top it off

To make the dates jam process (unpeeled if possible) pitted dates with a bit of water. Spread the jam on the crust, eat immediately or refrigerate until firm for at least 1 hour, if you can wait that long!
