Step 1: Gather the Ingredients

  • 1 whole organic pineapple
  • 1/2 cup organic coconut milk
  • 1/4 cup organic sugar
  • juice from 1/4 of an organic lime

Step 2: Core and Cut the Pineapple

Core the pineapple and cut the rings into 4 smaller pieces.

Step 3: Freeze the Pineapple

Place the small pineapple pieces on a cookie sheet and place in the freezer. Freeze for several hours or overnight, the longer the better.

Step 4: Blend the Ingredients

Place the frozen pineapple, coconut milk, lime juice and sugar in a blender and blend on high only until the mixture is smooth and there are no remaining fruit chunks.

Step 5: Scoop the Sorbet

Use an ice cream scooper, scoop the sorbet into bowls.

Step 6: Garnish and Enjoy

I garnished the sorbet with small wedges of either orange, lemon, lime, or pineapple and served it immediately.

Creamy Pineapple-Colada Sorbet

  • 1 whole organic pineapple
  • 1/2 cup organic coconut milk
  • 1/4 cup organic sugar
  • juice from 1/4 of an organic lime

Core the pineapple and cut the rings into 4 smaller pieces. Place the small pineapple pieces on a cookie sheet and place in the freezer. Freeze for several hours or overnight, the longer the better. Place the frozen pineapple, coconut milk, lime juice and sugar in a blender and blend on high only until the mixture is smooth and there are no remaining fruit chunks. Use an ice cream scooper to scoop the sorbet into bowls.

Yields: 4-6 servings
