3. Season like sushi rice

To make the pate taste similar to sushi rice, add vinegar and a bit of brown sugar.

4. Make the zucchini strips

Make the zucchini strips with a mandolin or peeler.

5. Begin to assemble

Lay a slice of zucchini down, add one or two stem-free, folded spinach leaves, place a small spoonful of pate on top, and then a strip of sun-dried tomato on top.

6. Fold away

Fold it and make it stand on a plate, use a toothpicks to pin it, if necessary. Enjoy with soy sauce and hot wasabi.
