1. Gather the ingredients

  • pita bread (organic whole-wheat is always better)

Toppings:

  • pepper
  • olives
  • zucchini
  • mushroom

Fake cheese:

  • a cup of sunflower seeds
  • garlic
  • olive oil
  • marine salt

Salsa:

  • a handful of sundried tomatoes
  • multicolored cherry tomatoes
  • chili pepper
  • fresh basil
  • garlic
  • olive oil
  • marine salt

2. Make fake cheese

Activate the sunflower seeds in water for at least half an hour. Mix with water, bits of garlic, olive oil and marine salt. Blend and leave aside.

3. Re-hydrate the sun-dried tomatoes

Re-hydrate the tomatoes in hot water for at least 30 minutes or until soft.

4. Make the salsa

Chop the multicolored tomatoes, the pepper, the sundried tomatoes and the garlic into small bits, then mix. Add a sliced chili pepper (with or without seeds, up to you), some fresh basil and extra virgin olive oil into the mix.

5. Slice and peel

Mushrooms and zucchini are a perfect match. Slice the mushrooms and the zucchini. You could use a peeler if you like very thin slices.

6. Cut the pita bread and take to the oven

Cut the pita bread with scissors (or a sharp knife) and take to the oven for a few minutes, until they start turning gold. If you use the grill they will be crunchier than using the oven.

7. Decorate

Once you have everything chopped, sliced, mixed and ready, decorate as you like.

8. Enjoy!

Enjoy with a dash of extra virgin olive oil and salt and pepper to taste.
