Organic Banana Pudding Ingredients

Preheat oven to 350F

  • 1/2 cup organic cane sugar
  • 1/3 organic whole wheat flour
  • dash sea salt
  • 3 organic cage free eggs separated
  • 2 cups organic milk
  • 3 tbs organic vanilla
  • 1/4 cup organic cane sugar for egg whites
  • 5 organic banana’s
  • box of organic vanilla wafers

Step 1: Cook Pudding

I don’t have a double broiler, so I use two sauce pans for a makeshift one. In the bottom pan, I fill 1/2 way with water and boil. Then add the top pan. In the top pan, mix together the 1/2 cup of sugar, flour, and salt. Then whisk in the 3 egg yolks and milk. Make sure the mixture is completely combined. Cook, uncovered and stirring constantly for 10-12 minutes or until thickened. Then remove from heat and stir in vanilla.

Step 2: Slice Banana’s

While the pudding is cooking, slice the 5 bananas. Boon makes a great Nanner slicer which makes this task super easy and the perfect sized slices.

Step 3: Make Meringue

After the pudding has cooked, using a high speed mixer or blender, beat the egg whites until soft peaks form. Then gradually add 1/4 cup sugar beating until stiff peaks form.

Step 4: Layer the Pudding

Using a glass casserole dish, cover the bottom with pudding. Then add a layer of wafers, bananas, and then pudding. Layer the dish 3 times and be sure to end with the pudding. I like to leave the top layer of wafers uncovered with pudding so they are crispier.

Step 5: Top With Meringue and Bake

Spoon the meringue over the pudding. Make sure to cover the entire surface and seal the edges. I also form peaks as I am spreading. Bake the pudding at 350F for 15-20 minutes until lightly browned. Then cool before eating.
