Ingredients

*Preheat oven to 375

  • 4 cups organic blackberries
  • 1 tablespoon organic lemon juice
  • 1 large organic cage free egg
  • 1 1/3 cup organic cane sugar
  • 1/3 cup organic quinoa flour
  • 1/3 cup organic coconut flour
  • 1/3 cup organic whole wheat flour
  • 5 tablespoons coconut oil
  • * may need up to a 1/2 cup organic milk or water to thin batter

1: Make Blackberry Mixture

In a saucepan over medium heat, mix 2 cups of blackberries with any juices, 1 tablespoon of lemon juice, and 1/3 cup of sugar. Bring the mixture to a boil and simmer for 20 minutes. The mixture should be gooey and a thin syrup.

2: Grease Pan and Pour Blackberries In

Grease your pan with either coconut oil, butter, or palm shortening. Then mix the 2 cups cooked berries with the remaining berries. Pour into the greased pan.

3: Mix Batter

Mix the 3 flours, remaining sugar, and 1 egg.

4: Add Milk if Needed

If your batter doesn’t look like this, then you need to add milk or water. You may need up to 1/2 cup. You want the flour and sugar to be blended but you still want the batter to be semi coarse.

5: Spoon Batter and Coconut Oil

Drop spoon fulls of batter over the berries leaving spaces in between. Then spoon the coconut oil over the dish. Bake at 375 for 35 minutes.
