1. Gather the ingredients

  • Spaghetti (or any other pasta)
  • 1 lemon
  • 1 garlic clove
  • 2 chilies
  • a bunch of thyme
  • a bunch of parsley
  • red peppercorns (or black)
  • extra virgin olive oil

2. Cook the pasta

Cook the pasta al dente in a generous amount of boiling, salted water for about 10 minutes. Drain and return to the saucepan.

3. Chop the garlic

Chop the garlic into small bits.

4. Chop the herbs

Wash, dry and chop your fresh herbs. Be creative and use what you have at hand or what you have growing in the garden or windowsill.

5. Chop the chili

Chop the chili using a knife and fork, or gloves, to prevent transferring the heat to your eyes. Keep or discard the seeds, it’s up to you based on how much heat you want to add to your dish.

6. Cook altogether

Bring the garlic, herbs and chili into the saucepan containing the (almost) cooked spaghetti, add the juice of one lemon and heat for a few minutes to let the ingredients soak up the juice. Serve with sprinkled lemon zest and enjoy with a glass of organic local red wine.
