HOW TO MAKE Vegan Pumpkin Orange Soup

1. Gather the ingredients

  • 1 medium sized pumpkin
  • 1 large carrot (or 2 small ones)
  • 1 orange
  • 1 tbsp of grated ginger
  • 3 garlic cloves
  • 2 spoonfuls of olive oil
  • a pinch of marine salt and pepper
  • parsley, nuts and orange peels for decoration/garnish

2. Slice the carrot

Wash and slice the carrot into small pieces. Don’t bother peeling it if it’s organic.

3. Steam the pumpkin and carrot

Wash, peel and cut the pumpkin into small chunks. Steam together with the carrot slices. You could also boil it, but we prefer steaming as it saves up flavor, time, energy and also nutrients.

4. Mash

Take the pumpkin and carrot chunks, place in a bowl and mash together.

5. Chop the garlic

Chop the garlic into small chunks, but don’t worry too much as it will all go into the blender.

6. Grate the ginger

Grate some ginger to give the soup a strong fragrant aroma. If you don’t want the skin, just peel it with a spoon.

7. Grate then squeeze the orange

First grate the orange, this will be a delicious scented decoration once the soup is ready. Then cut it in half and squeeze it in.

8. Mix mix mix

Mix all the ingredients, the pumpkin, the carrot, the garlic and the grated ginger. Add the orange juice, a dash of olive oil, some salt and pepper. For a creamier texture try blending it or add cashew nuts, or any other seeds cream or milk.

9. Decorate

Decorate with the scented orange peels, any nuts you have at home and some fresh green parsley.
