Jungers Culinary Institute is a State-Of-The-Art Cooking School in Oregon

The Jungers Cascade Culinary Institute at the Central Oregon Community College (COCC) in Bend, Oregon is more than just a place to learn how to brew beer and prepare local food. The state-of-the-art cooking school is also a top notch green facility that is certified Gold under the Earth Advantage building program. Designed by Yost Grube Hall Architecture, the project makes use of daylighting, high performance SIP construction, and a variety of energy efficient systems and appliances.
The Jungers Culinary Center for the Cascade Culinary Institute was opened for the Fall 2011 semester. Located on the southwest side of the Bend, Oregon COCC campus, the culinary school is aiming to be one of the best facilities and institutes in the west. Yost Grube Hall Architecture  worked with the school and some of the leading dining establishments in the region to design the facility. The multi-purpose building provides space for education, training and dining with a lunch, happy hour and dinner service in it’s elegant Elevations restaurant. The 15,205 sq ft building features a total of three instructional kitchens and a demonstration theater.
Built according to the standards of the Earth Advantage Institute  for commercial buildings, the Jungers Culinary Center was one of the pilot projects and was awarded a Gold level certification. Earth Advantage is being billed as an alternative to LEED and must meet criteria in five categories: energy, water, health, materials and land. Among the strategies employed to reduce energy consumption was the use of prefabricated SIP panels  for construction to create a high performing envelope. Daylighting is extensively utilized and pours into the interior of the building through high clerestory windows. Advanced oven hoods that use heat sensors and lasers to detect smoke or heat were utilized to cut down on energy use. The school also practices sustainable food preparation practices and teaches students about composting , recycling and food conservation.
