Alison Knowles Will Make a Giant Salad on the High Line & You’re Invited to Eat it!

How will you be celebrating Earth Day this weekend? Perhaps the tastiest event in NYC will be taking place this Sunday, April 22 on the High Line [3], where artist Alison Knowles [4] will be staging an art historical performance. The artist, who was part of the Fluxus movement [5] of the early 1960s, will perform her 1962 piece, “Make a Salad,” and in effect make a giant salad for the entire audience.

Knowles first performed her Fluxus piece in Baltimore, cutting massive amounts of lettuce, tomatoes, carrots and cucumbers, the dressing the salad in olive oil, herbs and balsamic vinegar, which was then enjoyed by 300 on lookers. The Fluxus movement was originated by composer John Cage [6], so many of the movements’ pieces involve an intermedia of sound, performance and visual art.

“Make a Salad” does just that, beginning with a Mozart concerto, which then blends into the sounds of Knowles chopping the crisp vegetables. In the initial performance, Knowles tossed the elements o the salad down from a bridge, where it was then caught and dressed with the olive oil and vinegar. The audience was then invited to eat the salad while listening to the Mozart piece, which ends the performance.

“Make a Salad” has been performed at the Tate Modern [7] in London and the San Francisco Art Institute [8]. The performance at the High Line [9] will take place on Sunday, April 22nd, from 10 a.m. to 12 p.m. at the Chelsea Market Passage above 16th Street, with live music by Joshua Selman. The salad will be served until 1 p.m.
