Brooklyn’s Prospect Restaurant Will Have Walls Made from Upcycled Coney Island Boardwalk Wood

We’ve seen wood from the historic Coney Island boardwalk [5] being recycled all over the city, and now it’s even being reincarnated as the walls of a new restaurant in Fort Greene. When complete, the new Prospect [6] eatery and bar will have an interior clad with reclaimed pieces from the infamous beachside walkway and will also boast local produce sourced from one of our favorite rooftop farms, the Brooklyn Grange [7].
[8]
Alan Cooper and Stephen Cohen, Prospect’s founders, are both Brooklyn natives, and wanted to give something back to their community by bringing them a restaurant with a sustainable menu [9] that preserves a bit of Brooklyn history. To that end, Prospect’s interior walls will be made from wood from the Coney Island boardwalk that has been replaced by the Parks Department over the last few years.
Aside from the throwback to old Brooklyn, the restaurant will also focus on sourcing produce from the Fort Greene Park Greenmarket [10] and the Brooklyn Grange’s rooftop farm [11]. The seasonal menu will support local farmers [12] and reflect a belief in quality and sustainability. Dishes will highlight seasonal veggies and use peak ingredients depending on the time of year they are harvested.
