This past year, a public school in Queens, NY, became the first in the nation to adopt an all-vegetarian menu in its cafeteria, and the students are thriving because of it. With meals like vegetarian chili and tofu wraps, the kids have been found to have more energy, longer attention spans, and better grades. Although students are allowed to bring their own lunches to school that contain meat, 90% of students are choosing the veggie-based cafeteria meals instead, and they (and their parents!) deserve some serious kudos for understanding and pursuing healthy, smart food choices.
