The Greenest Restaurant in America is in Omaha, Nebraska

Up and coming Omaha  can now add a new accolade to its name – it has the greenest restaurant in America , so named by the Green Restaurant Association. The Grey Plume , which celebrated its opening on December 10th in the Midtown Crossing Development in downtown Omaha, Nebraska, recently became the nation’s first three star SustainaBuild™ Certified Green Restaurant®. The seasonally driven restaurant  recycles, composts, reduces waste, saves energy and water, and incorporated reclaimed and eco friendly materials in its build out.
The Grey Plume is located in Midtown Crossing , a LEED for Neighborhood Development mixed-use project centered around a revitalized park. Owned and operated jointly by executive chef Clayton Chapman and Chicago-based chef Michael Howe, the super green restaurant focuses on a menu of locally-grown produce and livestock with a farm to table approach . As such, the menu is constantly changing based on what is available and seasonal.
The brand spanking new restaurant was the first in the country to meet the association’s SustainaBuild standard , and it also accumulated the most GRA points to-date, which makes it the Greenest Restaurant in America. A long list of green initiatives  distinguishesThe Grey Plume including reclaimed building materials, energy efficient lighting, water and energy efficiency measures, recycling and composting programs, non-toxic cleaning materials and eco friendly to-go ware.
