The Greenest Restaurant in America is in Omaha, Nebraska

Up and coming Omaha [5] can now add a new accolade to its name – it has the greenest restaurant in America [6], so named by the Green Restaurant Association. The Grey Plume [7], which celebrated its opening on December 10th in the Midtown Crossing Development in downtown Omaha, Nebraska, recently became the nation’s first three star SustainaBuild™ Certified Green Restaurant®. The seasonally driven restaurant [8] recycles, composts, reduces waste, saves energy and water, and incorporated reclaimed and eco friendly materials in its build out.
The Grey Plume is located in Midtown Crossing [10], a LEED for Neighborhood Development mixed-use project centered around a revitalized park. Owned and operated jointly by executive chef Clayton Chapman and Chicago-based chef Michael Howe, the super green restaurant focuses on a menu of locally-grown produce and livestock with a farm to table approach [11]. As such, the menu is constantly changing based on what is available and seasonal.
The brand spanking new restaurant was the first in the country to meet the association’s SustainaBuild standard [12], and it also accumulated the most GRA points to-date, which makes it the Greenest Restaurant in America. A long list of green initiatives [13] distinguishesThe Grey Plume including reclaimed building materials, energy efficient lighting, water and energy efficiency measures, recycling and composting programs, non-toxic cleaning materials and eco friendly to-go ware.
