Organic Orange Cranberry Cookie Ingredients
Preheat oven to 375 F
- 1 cup organic butter, softened
- 1 cup organic cane sugar
- 1/2 cup organic brown sugar
- 1 organic egg
- 1 organic orange
- 1 cup organic whole wheat flour
- 1 1/2 cups organic all purpose flour
- 1/2 teaspoon baking soda
- 2 cups dried organic cranberries
- 1/2 cup walnuts
Step 1: Cream Sugars
In a mixing bowl, blend softened butter and sugars until creamy.
Step 2: Add Egg
In a separate bowl, beat the egg. Then add the egg to the mixing bowl with creamed sugars and blend.
Step 3: Add Orange Zest and Juice
In in separate bowl, use a zester to grate the orange. You need at least 3 teaspoons of zest. Then juice the orange to get 4-6 tablespoons of juice. Add both to cookie mix and blend well.
Step 4: Add Flour
Slowly add the flours and baking soda to the mix and blend.
Step 5: Add Fruit and Nuts
Add fruit and nuts to the cookie mix and stir. Your cookie dough should be very soft and gooey.
Step 6: Spoon on Cookie Sheet
On a non-toxic cookie sheet, spoon the dough at least 2 inches apart. Your dough should not be firm. Bake for 10 minutes.
