Halloween is just around the corner, and we have some silly, spooky snacks for kids to indulge in before they go for high-sugar times on the trick or treat trail. With monsters and scary creatures in mind, we made a happy Frankenstein toast with an avocado spread decorated with raw vegetables and corn tortilla chips for the zigzag fringe. The apple bites take even less time to make. Just slice up the apples and spread jam or peanut butter inside. The apples get their "bite" from crooked teeth born of roughly chopped almonds. Dig in!
1. Gather the ingredients
- 2 slices of brown bread
- 1 avocado
- a handful of tortilla chips
- 1 small red bell pepper
- 1 carrot
- 1 cucumber
- 4 black olives
- 2 capers (for the nose)
- 1 tbsp of rice (for the scar)
- 1 green apple
- 1 red apple
- 2 tbsp of peanut butter
- 2 tbsp of raspberry jam
- a bunch of almonds
2. Make Frankenstein’s base
Toast the bread and spread a mashed avocado paste on it, season with salt and pepper.
3. Make Frankenstein’s green skin
First peel the cucumber, cut its edges and chop it so it’s the length of the toast. Using the same peeler, peel it on the same spot into ribbons to cover the entire piece of toast.
4. Make the eyes
Slice a carrot thinly and make the eyes’ base. Then take a sharp pointy knife and cut the top and bottom of a black olive to make the eye’s center (or use a slice from a pitted olive).
5. Make the fringe
Using the same sharp knife, cut very carefully the triangular edge of a bunch of tortilla chips, to make the zigzag fringe.
6. Make the scar
We painstakingly made Frankenstein’s side scar with leftover cooked white rice grains, but the scar can also be made from tofu, cooked spaghetti or any other long white ingredient found at hand.
7. Finish the Frankenstein toast
After layering the avocado spread, cucumber slices, nacho hair, carrot and olive eyes, and the scar, it’s time to finish it off with a thin slice of red bell pepper for the mouth, half cucumber slides as ears, and a small emerald caper as a nose.
8. Make the apple bites
Slice each apple into 4 sections and cut each section into thinner slices to make the lips. Remove the core and seeds from each slice.
9. Chop the Almond teeth
Roughly peel and chop almonds to look like crooked teeth (some brown almond skin improves the effect).
10. Construct the Apple Bites
Get a pair of apple slices and spread jam or peanut butter onto each of them and press in some teeth. For a nut-free option, sunflower or pumpkin seeds can work in a pinch.
