Raw vegan nori rolls are a fun, quick and very easy snack or meal to prepare, and the best thing about them is that you can make them with any vegetables you have on hand, and your kids will love helping you roll them! Just pick a good combination of fresh organic ingredients, slice them thinly and wrap them all up with the salty crispy nori algae. Inside you could also add seeds, sprouts, some hummus for a creamier texture and even enjoy them with soy sauce, pickled ginger and wasabi, just like you would with sushi.
Full of vitamins, proteins, iodine and other goodness, these zero-energy rolls are super healthy, tasty and crunchy. The combination of garden vegetables with the nori’s marine flavor makes these rolls a great salad alternative. A fun recipe for making with kids, for taking out on a picnic or for throwing a unique party where guests can make their own roll version as they like. Read on to learn how to add this tasty dish to your mealtime repertoire and see how easy it is to become a sushi chef in six simple steps!
1. Gather the ingredients
- untoasted nori sheet
- courgette (zucchini)
- red cabbage
- handful of sprouts
- hummus or dip of choice
- sesame seeds
2. Slice vegetables thinly
Slice thinly the courgette, carrot and red cabbage using a sharp knife or a Julianne slicer.
Take one nori algae from the pack and place it on a wooden sushi mat with the shiny side facing downward (you can roll it by hand if you don’t have a sushi mat).
We used a pink hummus (made from beans and beetroot) because it keeps the vegetables together and adds great taste and color!
5. Place vegetables
Pour the dip along the nori’s closer edge, add the vegetables slices and the sprouts on top, sparkle with sesame seeds.
6. Roll and enjoy
Make the nori roll with the help of the sushi mat, eat and enjoy!
