Are you avoiding pink hearts, plastic-looking flowers and packed restaurants this coming Valentine's Day? So are we. Why not stay at home and indulge in an elegant treat that you can make yourself in no time with just two ingredients? An all-natural version of the classic After Eights mint candies, these sumptuous vegan chocolate-dipped mint leaves are simply made using fresh mint leaves bathed in organic dark chocolate. Keep them in the freezer and take them out on Valentine's Day to enjoy as a refreshing and unique treat for the whole family.
1. Gather the ingredients
- A bunch of fresh mint leaves
- Organic dark chocolate
2. Wash and dry the mint
Choose only mint leaves that are in ‘mint’ condition. Wash and dry them carefully.
3. Melt the chocolate
Melt the chocolate in a double boiler and stir. If you need to thin it out more, add a little melted vegan butter.
4. Dip the mints
Instead of dipping the leaves directly into the chocolate, take the back of a spoon (or a brush) and smooth the chocolate out thinly on one side, leaving a green tip exposed (for picking them up)
5. Let them dry
Lay the choc-mints on wax paper or on a plate and leave them to dry.
6. Freeze the mints
Eat them straight away or store them in the freezer, taking them out minutes before indulging.
Have some melted chocolate left? Dip in some strawberries, edible flowers or biscuits!
Note: the Chocolate-Dipped Mints will last a couple of days in the freezer, but it’s best to serve them the day you make them.
