If you, like us, get a craving for popcorn every now and then, you will love this sticky, sweet and nutty twist. It's a great alternative to plain expanded kernels, and ideal for munching away over a film or as an after dinner treat. The recipe is super easy. Just make the popcorn as usual, make a caramel mix, add on some walnuts and goji berries and bake in the oven altogether for a few minutes, until the caramel dissolves and sticks. The addition of the nuts and dried fruits will give any old plain popcorn a healthy, flavorful edge.
1. Gather the ingredients
- a handful of popcorn kernels
- 2 tbsp of coconut oil
- 2 tbsp of coconut sugar
- 1 tsp of marine salt
- 1 tsp of baking soda
- 1/2 cup of walnuts
- 1/2 cup of goji berries
2. Make the popcorn
Pop the popcorn kernels in a pan on the stove with a bit of oil.
3. Get the tray ready
Preheat the oven to 250°F and line parchment paper on a tray sprayed with baking spray. Once the popcorn is ready, place it on the tray.

4. Make the caramel
Melt the coconut oil in a saucepan at 375° F and add the coconut sugar and a pinch of salt, stirring until they dissolve. Remove from heat and stir in the baking soda. Once incorporated, add the walnuts and goji berries.
5. Pour the caramel
Pour the caramel over the popcorn and mix to coat evenly. Bake for about 15 minutes or until golden.
6. Munch away
Take the tray out of the oven and allow to cool for 10 minutes. Break into pieces and serve as bites, and if you made too much, you can always mix it in with the morning cereal.
