2 Filipino Women Serve Up Savory Sustainable Tacos from Their Quirky GuacTruck

Two devoted environmentalists pushed past many obstacles to finally realize their yummy dream - Guactruck ^[6], the first retrofitted food delivery service to roam the streets of Manila in the Philippines. Our friends over at Core77 ^[7] had the good fortune to eat the pair's scrumptious Filipino food, which is prepared Mexican-style and served out of awesome origami packaging fashioned from a single piece of cardboard - and they gave it a resounding thumbs up. Michealle Lee and Natassha Chan ^[6] had to endure several meetings with the overseers of Manila’s chic Bonifacio Global City before they could convince them that the Guactruck is by no means a roach coach ^[8], according to Core 77. After winning them out, they had to find customers. At first only foreigners came by for a taste, but now the tacos and burrito bowls served on an assembly line are a huge hit among locals too.

Not only do they use local ingredients ^[9] to keep their food miles low, but they encourage their customers to recycle by offering an incentive program. After returning ten packages, which either Lee or Chan take to a nearby recycling center ^[10] for processing, a customer gets a free meal. The cutlery is biodegradable, the interior is fitted with energy-efficient LED lighting, and the retrofitted Mitsubishi L300 truck goes on a hiatus during the heat of the day to cut down on energy use. The rest of the time, given that they are a mobile service, a small generator provides powers.

The Guactruck is completely accountable to its social and environmental context, but it is also chic, which sends such a healthy message to the community that has grown up around it. What a fabulous concept and what fabulous women!
