Day After Dip

This day after dip is a great way to feed the family or guests without having to cook. Simply puree a can of white beans in a food processor with 1 or 2 leftover sweet potatoes, 1/4 cup of olive oil, 1/2 cup grated parmesan, and salt and pepper. Serve with crackers and garnish with roasted almonds.
