We’ve been using a simple, small covered paid for several years now and have never had the odor of rotting food. Perhaps the pail is small enough that we empty it often enough that that is not a problem. We also always rinse it out after each emptying.
We also never put table scraps in that contain meat, which will rot very quickly.
If the temperature in the kitchen is too high, this may also lead to rotting.
Another possible solution is to use a bokashi mixture in the pail that promotes decomposition (NOT rotting) and also minimizes odors. Then when it gets in the compost pile, the micro-organisms in the bokashi help the whole composing process further.
