Caroline Choker wanted to retain as much of the industrial chic flavor of the original building as possible. As such, much of the original infrastructure such as wooden trusses and cement beams are left rough and exposed. Using concrete for the floor in the interest of simplicity in no way detracts from the ambience, though we question its environmental benefit, thanks to a series of thoughtfully-placed furnishings. Vintage equipment on display behind a black-framed glass case further savors the building’s quirky history.

So much of what is wonderful about this sustainable renovation project lies outside! The Grounds serves only free-range eggs and grows much of their own produce on site. And you can be sure the food you eat there will nourish both body and soul. Gluten-free artisanal baked goods are available, and if you want your kids to have the skills necessary to produce such wholesome food for themselves down the line, send them over for some classes. This isn’t just a restaurant. This is home.
