Hey check out Nikoi Island – definitely one for your list. They are not just green but their whole approach is about a sustainable and responsible tourism development. Driftwood and grass roofs are the main building material, sand floors, no paints or varnishes. So not only are all their building materials bio-degradable they are even recycled. Also they have a big commitment to the local community only employing Indonesians and have set up a foundation. All of their supplies are bought locally.

There are some eco hotels that are luxurious and big, and there are other that are small, and promote community travel. Such is the case of Rocking Js in Puerto Viejo, Limon, Costa Rica. A fair sized hotel-host, where you can sleep in hammocs just in front of the beach, and under the stars.
