Coconut chia pudding with strawberriesChia is one of the most nutrient-dense "superfoods" on earth, packing in tons of <a href="http://authoritynutrition.com/11-proven-health-benefits-of-chia-seeds/">nutrients into very few calories</a>. Chia seeds are rich in protein, fiber, omega-3 fatty acids, antioxidants, Calcium, Zinc as well as the <a href="https://en.wikipedia.org/wiki/Salvia_hispanica">B vitamins thiamine, niacin, riboflavin and folate</a>. This delectable little seeds soak up the liquid and flavor of whatever surrounds them, creating an appealing pudding with a unique texture that is highly addictive!3
Chia Plant and SeedsFor those of you not familiar with <a href="https://en.wikipedia.org/wiki/Salvia_hispanica">chia</a>, it is a <a href="https://en.wikipedia.org/wiki/Salvia_hispanica">flowering plant in the mint family</a>, commonly grown as a commercial crop in Mexico and Latin America, with the scientific name <a href="https://en.wikipedia.org/wiki/Salvia_hispanica">Salvia Hispanica</a>. Although most contemporary Americans' familiarity with chia may be limited to <a href="https://www.google.com/search?q=chia+pet&rlz=1C5CHFA_enUS503US503&es_sm=119&tbm=isch&tbo=u&source=univ&sa=X&ved=0CB4QsARqFQoTCJmu9sDvyccCFVGZiAodDyAJKw">Chia Pets</a> - that quirky trend from the 80s - this plant has been grown for thousands of years in Mexico and Guatemala, by the <a href="http://www.chiaseeds.net.au/pages.php?pageid=10">Aztecs</a> and Mayans as an <a href="http://www.chiaseeds.net.au/pages.php?pageid=10">staple food crop</a> on the same level as maize. One article I read stated that the state of Chiapas in Mexico is named after Chia (which supposedly means "oily").4
Ground coconut milk and chia seeds<h1>INGREDIENTS</h1> - dry bulk chia seeds - fresh coconut milk (or your choice of beverage) - some sort of sweetener or fruit (if desired) - nuts or granola (if desired)5
Chia Seeds<h1>STEP 1: measure chia into your bowl </h1> Pour 1/8 cup of chia seeds (about 2-3 tablespoons) into a small lidded bowl6
Toddler making chia pudding<h1>STEP 2: add in your liquid</h1> Mix in about 2/3 cup - 1 cup of your favorite creamy beverage. Almond, soy and rice milk all work just fine, but we personally recommend fresh coconut milk (i.e. ground up coconut) - it is so delicious with the chia texture!7
Mixing up chia pudding<h1>STEP 2: add in your liquid</h1> Mix in about 2/3 cup - 1 cup of your favorite creamy beverage. Almond, soy, coconut and rice milk all work just fine, as does fruit juice or coconut water.8
Chocolate coconut chia puddingIf you want to make chocolate, vanilla, carob or cinnamon chia, mix the cacao powder or flavoring in BEFORE you put it in the fridge9
Making chia pudding with Fehren<h1>STEP 3: </h1> let the chia pudding sit overnight in the fridge, for at least 12 hours. During this time the seeds will soak up liquid from the beverage and expand10

Chocolate coconut chia pudding, with strawberriesHere's a chia pudding I made with carob and cinnamon - it was so good! Stir the carob (or chocolate, or vanilla or what have you) into the mixture before you put the chia seeds in and put it overnight in the fridge.12
