The Tantalo Kitchen restaurant and rooftop bar were both built from reclaimed wood from the Panama Canal, tying in a sense of history with their sustainable mission. Recycled newspapers and phonebooks keep the hotel nice and cool, functioning as insulation in the structural walls.
